‘CỐN SỦI’
A harmony of flavours

‘Cốn sủi’ is a dish closely associated with Sapa’s history as a crossroads of trade and cultural exchange. Over time, it has become one of Sapa’s most cherished culinary traditions.
Unlike pho or many other Vietnamese noodle dishes, ‘cốn sủi‘ contains very little broth. Instead, it is served with a rich, velvety sauce made by simmering pork bones with cardamom and cinnamon for five to six hours, resulting in a deeply aromatic base.
A bowl of ‘cốn sủi’ typically features flat rice noodles, sliced char siu pork, a soft-boiled egg, sweet potato, taro, roasted peanuts, fresh herbs, and sweet-and-sour pickled mustard greens. The harmonious combination of textures and flavours creates a dish that is both hearty and unique.
With every bite, diners experience the soft yet chewy noodles, the earthy notes of sweet potato and taro, and the rich sauce that ties every ingredient together. This comforting dish has long been a favourite breakfast choice, especially on Sapa’s cool mountain mornings.
‘THẮNG CỐ’
The flavour of togetherness

Found in the traditional markets of the Hmong, Tay, and Dao communities, ‘thắng cố’ is more than a dish – it is a social experience. Rather than being served individually, it is typically enjoyed around a large communal pot shared among family and friends.
The dish traditionally consists of horse meat and offal, though beef or buffalo may also be used depending on local customs. The ingredients are simmered for hours with cardamom, cinnamon, star anise, and ginger, creating a fragrant broth infused with the unmistakable aromas of mountain spices.

Each person serves themselves directly from the shared pot. Amid the lively atmosphere of the market, meals often stretch on for hours, filled with stories, conversations, and friendly exchanges.
‘Thắng cố‘ is often accompanied by corn wine, a traditional highland spirit. Shared throughout the meal, it enhances the convivial atmosphere that has become inseparable from this iconic dish.
‘NEM MĂNG ĐẮNG’ – BITTER BAMBOO SHOOT SPRING ROLLS
A taste of untamed nature

Unlike traditional fried spring rolls, which are known for their balanced flavours, the Tay community’s bitter bamboo shoot spring rolls celebrate the distinctive character of wild bamboo shoots.
According to local knowledge passed down through generations, the season’s first rains signal the ideal time to harvest wild bamboo shoots from the surrounding mountains, when their naturally bitter flavour is at its most pronounced.
The shoots are blanched, finely chopped, and mixed with chicken, chives, shallots, fish sauce, and pepper. The filling is then wrapped and fried until golden and crisp.

From the very first bite, the subtle bitterness of the bamboo shoots unfolds, followed by the savoury richness of the filling and the crisp texture of the fried wrapper. Served with fresh herbs and dipping sauce, the dish achieves a delicate balance while preserving the bold character of its mountain-grown ingredients.
